Who counts as a food handler in Tasmania
Under the Food Act 2003 and the national Code, a Tasmanian food handler is anyone who handles food or the surfaces it touches. In practice that means Salamanca market traders, North Hobart restaurant crews, Launceston café staff, Tamar Valley cellar-door kitchens and the lodge caterers who feed visitors at Cradle Mountain and Freycinet.
The Department of Health and local councils share oversight. Tasmania's food economy leans heavily on produce, tourism and seasonal peaks, which means a large share of food handlers are casual or working a summer — and the skills-and-knowledge expectation applies to them exactly as it does to permanent staff.
What Standard 3.2.2A means for Tasmanian food businesses
Standard 3.2.2A has applied nationally since 8 December 2023 and covers Tasmanian businesses serving unpackaged, potentially hazardous, ready-to-eat food. Category One — food service and catering — must use a trained Food Safety Supervisor, food handler training and substantiation of key controls. Category Two retailers must use the first two.
Tourism lodges, market food stalls and restaurant kitchens are the Tasmanian operations most likely to sit in Category One. The food handler training element is about completing training in specified food-safety matters and does not name an accredited provider, unlike the supervisor element. Our course covers that ground; it is not accredited training and does not make anyone a food safety supervisor.
Food safety certificates in Tasmania: supervisor versus food handler
Tasmania has not run a single statewide food safety supervisor licence, so requirements have been set by the Department of Health, councils and individual businesses. As elsewhere, though, a supervisor role and food handler training are different things: one is a business appointment with formal competency requirements, the other is personal knowledge that every food handler is expected to have.
