Time as a Control: The 2-Hour / 4-Hour Rule

Sometimes food has to be out of temperature control for a while — during prep, transport or service. Australia's 2-hour/4-hour rule lets you manage this safely by tracking the total time food spends in the danger zone.

How the rule works

The rule counts the total accumulated time that potentially hazardous food spends between 5°C and 60°C — not just one sitting, but every period added together across its life.

  • Under 2 hours total — the food is safe to use, or to put back under refrigeration
  • Between 2 and 4 hours total — the food must be used now; it cannot go back in the fridge
  • More than 4 hours total — the food must be thrown out

Why time is cumulative

The clock does not reset. If a tray of sliced ham spent 1 hour out during prep in the morning and another 1.5 hours out at lunch, that is 2.5 hours total — it must be used immediately and cannot return to the fridge.

Because tracking this in your head is hard, many kitchens label food with the time it left refrigeration so anyone can see how long it has been out.

When in doubt, throw it out

If you cannot be sure how long food has been in the danger zone, treat it as unsafe and discard it. The cost of wasted food is tiny compared with the cost of making a customer seriously ill.

Practical examples

  • Sandwiches out of the fridge for a total of 90 minutes can safely go back into refrigeration.
  • A platter left out for a total of 3 hours must be served now and not refrigerated again.
  • Quiches that have been at room temperature for over 4 hours are thrown out.
